The next recipe for cooking with kids series is Potato Cheese Cutlet. It’s actually a recipe the whole family can enjoy making together. My husband peeled the potatoes and grated the cheese, my girls mashed the potatoes and made the cakes, while I did the frying. We had a wonderfully messy and fun time in the kitchen.

The weather was nice and windy so we took our cardamom tea and potato cheese cutlet out on the porch . You don’t need to spend lots of money or go miles away from home to have a good family time. Just switch off your television, computers and cellphones and enjoy cooking and eating your favourite meal together.

Hope you will enjoy cooking this yummy recipe with your family. The delicious potato cheese cutlet have a crispy crust and the cheese oozes out as you take a bite into them. It’s a great recipe for picnics, tea parties and kids’ lunch boxes.

Ingredients:

1 kg potatoes, mashed
1 medium onion, finely chopped
1 stalk green onion, finely chopped
2 green chilli peppers , seeds removed n chopped
1/2 cup fresh coriander/ parsley leaves, chopped
1 cup cheddar cheese, shredded
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon red chilli powder
1 teaspoon ground cumin
1 egg, beaten
1 cup corn flour
1 cup bread crumbs
1/4 cup vegetable oil

This Is What You Do :

Boil potatoes till knife inserted goes in easily. Cool and slip off the skins.

Mash potatoes in a big bowl, add salt, pepper, ground cumin and red chilli powder.

Add chopped onions, green onions, green chilli pepper and coriander leaves. Mix all ingredients well.

Grate cheese. Divide the mix into 15 equal portions. Take one portion, spread it on your palm, place 1 tablespoon of grated cheese in the middle. Wrap the sides all around cheese centre, flatten the cake a bit with your fingers. Repeat with all the potato mix.

Coat in corn flour, then egg and then bread crumbs. Heat half the oil on medium-low heat in a large non stick sauce pan. Fry in two batches till they turn crispy and golden.

Add more oil if required, repeat with the remaining patties.

Makes 15 medium sized potato cheese cutlet
