This simple and quick recipe for Fusilli in Garlic Oil is great for a light lunch with flavours of garlic, lemon and parsley shining through. You can use some protein of your choice like cooked chicken, fish ,shrimps or sausages to make it a more filling meal. I added some leftover pan fried sole to my pasta. You can use store bought garlic oil but it’s very easy to make your own so why not ! It lasts easily 2-3 weeks in the fridge for you to add to your favourite meals.

For Fusilli in Garlic Oil:

1 packet fusilli , 500g
1/4 cup garlic oil
1/4 cup lemon juice
1 cup parsley, finely chopped
3 stalks spring onions, finely chopped
2 teaspoons red chilli flakes
1 cup cooked fish or chicken ( optional)
Salt for seasoning

This Is What You Do :

Boil pasta in salted water till al dente. Drain and keep warm. To make your own garlic oil, heat 1 cup extra virgin olive oil in a small frying pan on low heat. Add 5-6 cloves of garlic and let simmer for about 10 -15 minutes or till the cloves turn light brown. Turn the heat off and let the oil cool down . Use 1/4 cup for this recipe and save the rest in an air tight container to use later on, tastes great on salads.
Chop parsley and spring onions, add red chilli flakes and lemon juice. Add garlic oil and pour this mixture over pasta, stir. Season with salt if required. Add some cooked meat of your choice, fish, shrimps, chicken, sausages are some good options or serve as it is for a simple and flavourful vegetarian version.
