Eggs are the best fast food option in this world for me. Whenever I want a quick meal which is nourishing and tasty, I choose eggs. Luckily, everyone in my family likes eggs, so from a variety of breakfast ideas to protein packed lunch solutions, eggs are a family favourite. In this recipe we combine the goodness of eggs with the nutritional benefits of sweet potatoes. The result is a meal full of protein, vitamin, fibre and beta-carotene.

The word ‘Fast food’ brings to ones mind the images of all sorts of junk food…but actually fast food can also mean quick, energising food. For me this recipe for Sweet Potato Frittata muffins is fast food …it’s delicious, satiating, looks good and can be prepared and served within 30 minutes…perfect for a busy lifestyle ! I usually serve these with fresh salad and yogurt.

For Sweet Potato Frittata Muffins:

5 eggs, beaten
1/2 cup sweet potato, shredded
1/4 cup cheddar cheese, grated
1/4 cup parsley, chopped
1/4 cup onion, chopped
1 teaspoon black pepper
3/4 teaspoon salt or to taste
Butter for greasing the muffin dish

This Is What You Do :

Preheat oven to 170 degrees C. Grease 8 holes of a 12 hole, 1/2 cup capacity muffin dish. Combine eggs with sweet potatoes, cheese, parsley, onions, black pepper and salt. Pour into the muffin tray. Bake for 15 minutes, let it sit for 5 minutes then turn out. Serve with salad of your choice.
