Good food doesn’t have to be complicated, in fact some of the best tasting dishes I’ve found to be the simplest ….where you can actually taste the ingredients that make the dish.
There is nothing better than a quick pasta meal in summers. The cute Farfalle makes it more attractive for the kids and simple grilled tomato sauce keeps it light and low in calories. Peas add a touch of fresh green to the dish. All you need now is some good company 😉
For Farfalle and Peas in Grilled Tomato Sauce:
500 g Farfalle/bow-tie pasta
8 ripe tomatoes, sliced
1 medium onion, cut into four pieces
2 cloves garlic
3 tablespoons lemon juice
1 cup frozen peas
1 teaspoon dried basil
1 teaspoon dried oregano
Salt to taste
1 teaspoon black pepper
5-6 pickled cherry peppers(optional)
1 cup shredded Parmesan
1/4 cup olive oil
This Is What You Do :
Boil pasta in salted water till al dente. Heat a grill, place tomatoes, onion and garlic over it. Drizzle a little olive oil and grill till the vegetables have grill marks over them. Add grilled vegetables and lemon juice to a food processor, blend a few seconds for a chunky sauce, don’t make a smooth paste. Add to pasta.
In a microwave safe bowl add 1/4 cup water to frozen peas. Cover and microwave 2-3 minutes. Drain and add to pasta. Add basil and oregano, olive oil,season with salt and pepper.
Top with shredded Parmesan and sliced cherry peppers(optional).
Makes 6 servings
