They say happiness comes from small things. Waking up to a plate of crisp fried bread with oozy, heart shaped, egg centres can brighten up the greyest of mornings.
This is a very simple and easy recipe to bring a smile to someone’s face . My younger daughter made these Eggs in the Nest Hearts for us this Valentine’s Day. Not only they tasted delicious but added another happy memory to smile back upon and cherish for the rest of our lives ! Small things do matter 🙂
For Eggs in Nest Hearts :
2 eggs
2 bread slices
2 tablespoons butter or olive oil
Salt and paprika for seasoning
This Is What You Do :
Place the bread slices on a chopping board or hard, flat surface.
Press a 2 inch, heart shaped, cookie cutter into the slices, scoop out heart shapes from bread slices.
Heat a nonstick frying pan on medium low heat.
Add butter or oil to the pan, when it is hot add the bread slices and heart shapes to the pan.
Flip when they are golden and crispy on one side.
Break an egg each into the hollow places in the middle of the slices.
Reduce heat to low. Cover the pan and let the eggs cook till done to your requirement… I like mine with runny yoke.
Season with salt and paprika or black pepper. Serve with the heart shaped fried piece of bread on side to dip into the yoke.
