Fondue is my most favourite comfort food for casual yet elegant small gatherings, cosy dinners and movie nights. There can be so many variations from chocolate to pure cheeses to vegetable purée based.

This Tomato Chilli Cheese fondue packs a big punch of flavours…sour, sweet and spicy ! You can adjust the chillies according to your level of tolerance but I like mine on medium to extra hot side.

Fondue pot keeps this sauce warm, the cheese melted and creamy so you can serve a number of cold cuts and breads to dip into it on the side.

Usually it is served in special fondue pots but if you don’t have a fondue pot, you can use some kind of little stand to place the pot over it and light a candle under it. Or simply heat it up in a microwave safe bowl or in a saucepan over stovetop and keep the sauce fairly runny which will keep it warm for a longer time. Ceramic pots keep things warm for a longer time. If special fondue sticks are not available, you can use toothpicks, Chinese chop sticks or forks.

There is nothing like a fondue to keep the conversation going around the table !

For Tomato Chilli Cheese Fondue :

4 ripe tomatoes, roughly chopped
1 clove garlic
2 teaspoon chilli paste
1 teaspoon mustard sauce
1 tablespoon brown sugar
1 teaspoon dried oregano
1 teaspoon salt or to taste
2 tablespoons olive oil
1/2 cup cheddar cheese, shredded

This Is What You Do :

Add tomatoes, garlic, brown sugar, mustard sauce and salt to a food processor, whiz till a smooth paste forms.
Heat oil on medium low heat in a sauce pan. Add the tomato sauce, let it simmer for 5 minutes. Stir in cheese, take it off the heat as soon as the cheese melts.
Stir in oregano, pour into fondue bowl.
Serve with grilled sausages, French bread, potato wedges, dumplings or meatballs …there is a wide margin for innovation !
