What Is Deep Dish?
Deep Dish is more known around the world for the Chicago style, thick crusted pizza. But Deep Dish cookies are gaining popularity around the world pretty fast too. Call it Deep Dish Cookie, Skillet Cookie, Tray Bake or even Pizzookie (pizza + cookie), there is nothing more heart warming than a huge chocolate caramel cookie straight out of the oven. Traditionally baked in a cast iron skillet, this is a simpler and faster way of baking a big batch rather than baking individual cookies. If you don’t have a cast iron skillet, you can bake this yummy Chocolate Caramel Cookie in a pie dish or any oven proof dish too.
Customize Your Giant Chocolate Caramel Cookie Pizza:
There is so much you can do with the basic cookie recipe to create your custom cookie in a skillet. You can simply add chocolate chips, stir in nuts, coconut, double or triple the ingredients in the recipe to make double or triple layer of gooey goodness. I chose to combine two of my most favourite dessert flavours in it – chocolate and caramel, and made a swirl or marble pattern with them to get the divine combination in each warm mouthful of this Chocolate Caramel Cookie.
Chocolate Caramel Cookie – A Crowd Pleaser
This recipe is the epitome of comfort food, meant to be served to family or a group of close friends and don’t forget to top it with ice cream, caramel sauce or hot fudge for an ultimate food comatose. Imagine a family huddled together around a warm dish of cookie pizza on a cold evening, chatting away, playing boardgames – that is happiness!
Ingredients:
1/2 cup brown sugar
1/3 cup granulated sugar
A few drops vanilla essence
1 egg
1 cup plain flour
1/2 teaspoon salt
1/2 teaspoon baking soda
10-12 caramel pieces
3 tablespoons heavy cream
1/2 cup chocolate chunks
This Is What You Do:
Cream together the butter, brown sugar and granulated sugar in a large bowl with an electric mixer until mixture is light and fluffy.
Add vanilla and egg. Mix well.
Combine flour, salt and baking soda in a separate bowl. Add the dry ingredients to the wet ingredients gradually. Mix to combine thoroughly.
Lightly grease a 9 inch skillet or pie dish or line with parchment paper for easy lifting. Spread the mixture into the skillet.
Place the caramel pieces and heavy cream in microwave safe bowl and heat at 15 second intervals till melted and smooth.
Place chocolate in a microwave safe bowl and heat the in the microwave at 15 seconds intervals till melted.
Drizzle caramel and chocolate over the cookie dough. Make swirls with a fork or spoon.
Bake 25 minutes for underdone, gooey perfection , 30 for set cookie with crispy edges.
Set aside for 10 minutes to cool before slicing. Cut into 8 wedges.
Serve warm in the pan, topped with ice cream, caramel sauce or hot fudge.
