When it comes to dessert toppings and sauces, I get seriously double minded about what to choose … chocolate or caramel !!! Digging your teeth in a thick layer of caramel sauce is as sensual and delightful an experience as licking chocolate off your fingers 🙂 here is a quick and easy recipe for delicious caramel sauce with a touch of salt. Enjoy !

For Caramel Sauce :

1 cup cream
1+1/2 cup brown sugar
1/4 cup water
1/4 teaspoon salt
1/4 teaspoon vanilla essence

This Is What You Do :

In a sauce pan dissolve brown sugar in water over low heat. Let it simmer without stirring till the sugar turns 2 shades darker and the syrup begins to thicken (6-7 minutes). Don’t let the sauce burn. Take the pan off heat, add cream slowly while stirring. Add salt and vanilla essence. Put the pan back on medium-low heat, cook and stir till the sauce thickens to desired consistency (almost 2-3 minutes). It becomes thicker when it cools and sets.
When it comes down to room temperature, save it in a clean, dry jar and refrigerate for future use or pour it over cakes, ice creams and desserts for delicious caramel topping. I poured it over my Caramel Walnut Cake ( recipe at http://www.foodaholic.biz/caramel-walnut-cake/) , further decorated it with chocolate ganache and pieces of KitKat.
Lasts 2-3 weeks in refrigerator
