Spring/summer fruits are pouring in, they are colourful, juicy and hard to resist. But why resist something that is healthy AND delicious !
The tangy strawberries and sweet as honey melons are two of my most favourite delights from this season.
I mixed them up, added dome creaminess from the protein packed cottage cheese and drizzled with mint, orange and honey dressing to bring out the flavours.
This simple yet delightful Fruit Salad Recipe makes a refreshing breakfast, a healthy snack and a guilt free dessert. Indulge to your heart’s content !
Ingredients:
10 strawberries
1 melon
1 cup Cottage cheese
A few fresh mint leaves
3 tablespoons orange juice
3 tablespoons honey
This Is What You Do :
Mix mint leaves, orange juice and honey in a bowl. Set aside for a few minutes while you prepare the fruits so that the flavour can blend in the dressing.
Cut off the tops of strawberries, cut them into halves.
Peel and cut the melon into bite size cubes.
Add to the strawberries, top with chunks of cottage cheese, feta or goat’s cheese.
Pour the dressing over the salad.
Serve chilled.
