The Waldorf salad was created by New York City’s Waldorf-Astoria Hotel in the late 1800s. Waldorf salad is traditionally made with apples, celery, walnuts and mayonnaise but a variety of other ingredients are added according to personal preferences.
I add grape fruit juice and segments to my Waldorf salad because I love citrus and try to incorporate oranges and grapefruits into a lot of my recipes when they are in season.
Personally, I love the smell and taste of grape fruits but if you are not that much into them, you can use oranges instead.
It’s a spicy, zesty twist to the traditional Waldorf Salad. Enjoy !
For Spicy Waldorf Salad in Grape Fruit :
2 apples, cored and cubed
1 stalk celery, chopped
2 grape fruits, halved
1/2 cup walnuts, crushed
1/4 cup mayonnaise
2 tablespoons lemon juice
Juice of one grape fruit
Iceberg leaves to serve
2 teaspoon dry red chilli flakes ( or to taste)
This Is What You Do :
In a mixing bowl add cubed apples, chopped celery and crushed walnuts.
Cut grape fruits into halves, remove the segments and pith with a knife to make four little bowls. Cut segments into halves, add segments and juice of one grape fruit to the salad bowl. (save the remaining segments of the second one for some other use).
Add lemon juice and mayonnaise, stir in chilli flakes. Give the salad a good toss. Line empty grape fruit peel bowls with iceberg leaves, spoon in the salad generously. Chill the little bowls in refrigerator to make lovely starters for any celebration meal.
