Eggs are pretty much the perfect food and there is nothing like a protein packed, hot and delicious omelette to kick start the week. This Asian style recipe for Chicken Omelette Wrap is great to bring your family, specially kids back to the breakfast table. Or you can make this to pack for their school lunch.

It’s even quicker to make if you prepare the chicken a day ahead and just fold it into the omelette when required.

The filling choices can vary according to your preference and availability of seasonal vegetables.
Broccoli, peas, French beans, shrimps and fish can be good choices.

For Chicken Omelette Wrap :

8 eggs, whisked
1/4 kg chicken mince
2 cloves garlic, crushed and chopped
1 carrot, thinly sliced
1 cup cabbage, shredded
1 green chilli pepper, chopped
1/2 cup coriander leaves chopped
1/2 cup mushrooms, chopped
2 tablespoons tomato ketchup
1 tablespoon soy sauce
1 teaspoon oyster sauce
1 teaspoon black pepper
1/2 teaspoon salt
4 tablespoons olive oil

This Is What You Do

Heat 2 tablespoons oil in a pan, add garlic and chicken. Fry till chicken changes colour.

Add the vegetables, black pepper and all the sauces. Mix well and cook till the chicken is done and vegetables tender. The mixture should be dry. Remove from heat and keep aside.

Heat a little oil in a nonstick or heavy frying pan. Add a pinch of salt and pepper to the eggs.
Pour half the whisked eggs in the pan. Spread in the pan to make a thin omelette.

When it’s half cooked and still wet, remove the pan from heat, add half of the chicken mix in the centre of the omelette. Fold the sides to make a parcel. Press a little so that the seams stick to close the parcel.

Cover with a plate and flip the pan. Shift the omelette back into the pan to cook the other side.

Repeat with the remaining eggs and chicken mix.

Serve hot with your choice of hot sauce. To make hot sauce at home:

Mix 8-10 cloves of garlic, 1 tomato, 6-7 dried red chillies, 2 tablespoons vinegar, 1 tablespoon cumin, 1 teaspoon salt and 1 tablespoon honey in a blender.
