Summer break is coming to an end with mixed feelings for both parents and kids. Parents heave a sigh of relief on one hand as life returns to normalcy and also feel a little sad at another year of fun and activities with the rapidly growing kids having slipped away. Kids are super excited about going to school which entails meeting friends and shopping for school accessories , at the same time they know it means getting up early in the morning again and half a day separation from their beloved gadgets.
Well… whatever the feelings, time to gear up for back to school days. Here are some easy and healthy lunch box recipe ideas, starting with Burrito Pinwheels .

For Burrito Pinwheels :

2 wheat flour tortillas
1 green capsicum
3 ripe tomatoes
1 green chilli pepper, seeds removed (optional)
1 cup cooked chicken, shredded
Or
1/2 can button mushrooms, sliced OR cooked beans (for vegetarian) option
2 tablespoon olive oil
4tablespoons hummus
Salt and pepper to taste
Juice of one lemon

This Is What You Do :

Heat the grill or skillet on high. Cut tomatoes in thick slices, cut bell pepper in strips, remove seeds from chilli pepper. Brush the vegetables with olive oil, grill till softened and slightly charred.
Spread hummus on tortillas, top with grilled vegetables and chicken/mushrooms/beans. Season with salt and pepper, squeeze lemon to finish. Roll up the tortillas as firmly as you can, slice with a sharp knife almost 1+1/2 inch thick rounds.

Makes 8 pinwheels
Tips : its the best way to use leftover chicken.
Filling options are unlimited depending upon your preferences.
For spread you can also use pesto, low fat mayo, spinach purée and chutney.
Ready the things a night before and assemble pinwheels in 5-6 minutes in the morning.
They make great healthy snack and delicious party starters.
