When I was a child, I always loved gifts hidden within gifts; a purse filled with hair accessories, a pencil case full of pretty erasers or a new lunchbox full of chocolates !

Little pleasant surprises can bring a lot of happiness, I created these muffins with the same idea. You see banana, chocolate chip muffins and think ‘ yummy’, then you take a bite into the hidden chocolate core and smile with surprise.

It’s a very easy and fun recipe. You can actually play with the idea by using any chocolate that you or your loved ones like. I used little chocolate hazelnut balls to hide inside my muffins. Dark, milk or even white chocolates can be used as well as caramel candies. Each of these muffins can become a small gift of happiness !

For Banana Chocolate Surprise Muffins :

3/4 cup butter,softened
3/4 cup brown sugar
1/2 cup caster sugar
3 eggs
1+ 1/4 cup self raising flour
1/2 teaspoon baking powder
1 teaspoon almond or vanilla extract
1/2 teaspoon ground cinnamon
3 medium bananas
15 cubes chocolate of your choice ( caramel candies can also be used)

This Is What You Do :

Preheat the oven to 175 degrees C.

Add all the ingredients of muffin batter to a food processor. Process to get a smooth batter.

Pour 2 heaped tablespoons of the batter into a muffin cup, place a cube of your favourite chocolate in the centre. Add another heaped tablespoon of batter on top to cover the chocolate completely.

Bake for 18- 20 minutes.

Sprinkle chocolate chips on top (optional)

Makes 12-15 medium muffins.
