Think of a dessert for some special occasion, and that too when you have already spent hours in the kitchen slaving over the mains and the sides. You know by the time the entire menu will be done, you shall be too tired to enjoy the party yourself. But these very festive looking, yummy Chocolate Coconut Snowballs have only 4 ingredients, they are no bake and ready to eat in 20 minutes. Sounds unbelievable, right ! And the best thing is they can be prepared ahead too.

Perhaps the most difficult thing in the entire procedure is the melting of the white chocolate properly. You can do it in the microwave too but I prefer the old school method for white chocolate because, compared to chocolate, it burns very easily and quickly. Also it shouldn’t come into contact with any liquid at all while melting or it will seize and get clotted. The best way is to place it in a bowl that fits over a simmering bowl of hot water and keep stirring it till it melts.

Take help from kids and friends in rolling, if you are making a big batch of Snowballs. It is as easy and as much fun as playing with play dough. Not only are these perfect to finish off a festive dinner but also make great holiday gifts packed in a box nicely.

Ingredients:

200g digestive or plain wheat biscuits ( almost 12-14)
3-4 cup sweetened condensed milk
1 cup white chocolate, broken into equal chunks
1+1/2 cup desiccated coconut

This Is What You Do:

Chop the white chocolate into equal sized pieces.

Boil water in a double boiler or if you do not have a double-boiler, use a small to medium saucepan and a place chocolate pieces in a shallow bowl that fits over the saucepan snugly. Make sure that the bowl does not touch the bottom of the saucepan or the surface of the water inside the saucepan. Keep the heat at low, do not use a wet spoon to stir the chocolate, do not cover the pan.

Stir the chocolate continuously till it melts. If it hardens during the process return it to the boiler for a few seconds.

Add biscuits to the food processor, blend till they are like fine bread crumbs.

Add condensed milk gradually to the food processor and mix till the mixture becomes like play dough.

Spread butter paper or lightly greased foil in a plate. Add coconut flakes to a custard bowl.

Divide the mixture into equal parts and make 10 balls out of them.

Dip the balls in warm melted white chocolate.

Dredge them all over in coconut flakes.

Place on the prepared plate. Refrigerate for 10-15 minutes or till the chocolate sets.
