They say you can’t make everyone happy so stop trying…but I continue trying where food is concerned because I’ve seen everyone feeling happy around a good dish of simple and delicious home cooked meal…well almost everyone ( not including some people who are born to be unhappy, the typical fixtures in every family) 😉
This is one of those very quick and simple recipes that brought smiles and happiness to my family last night.
Succulent chicken pieces, juicy pineapple rings coated with a sweet and sour sauce…it was a real treat for the taste buds. Enjoy !
For Sweet and Sour Pineapple Chicken :
2 tablespoon vegetable oil
4 chicken breast fillet
2 tablespoon dark soy sauce
2 tablespoon tomato purée
5-6 rings canned pineapple in juice
( also save the juice for sauce)
1 teaspoon chilli powder
1 teaspoon curry powder
1 tablespoon corn flour
Salt to taste
Coriander leaves and spring onions for garnishing
This Is What You Do :
Heat oil in a large nonstick pan, season the steaks with salt and fry on medium heat for 5 minutes on each side or till they are golden on outside. Add pineapple rings to the pan and let them caramelise a little.
Meanwhile mix sugar, soy sauce, tomato purée, pineapple juice, chilli powder and curry powder in a bowl. Add the sauce to the pan and let simmer for a few minutes till the sauce is slightly reduced. Dilute corn flour with a little water, add to the pan and stir till the sauce thickens a little and coats the chicken and pineapple completely. Garnish with coriander leaves and spring onions. Serve hot over steamed rice or noodles.
