Baked eggs take a little time, but no effort at all. So while they’re in the oven getting delicious and melty, you can prepare the rest of the meal or read your favourite magazine, curled up all cosy on the couch.
Plain old baked eggs are a treat on their own, but they can be dressed up in any number of easy and delicious ways. You can also add some of your favourite greens, mushrooms, leftover salads and roasts, pastas or bolognese sauce to this bowl of delicious goodness.
With so little effort Spicy Baked Eggs with Cheddar Cheese take your mundane egg and toast breakfast to a whole different level of indulgence. You can dip in some country bread or (as I love to do) grilled pita bread or just dig in with a spoon into the heartwarming bowl of oozing yolks and melted cheese. Its luxury in a bowl!
Ingredients:
- 1/2 teaspoon roasted red chilli pepper flakes
- 2 eggs
- 2-3 button mushrooms, chopped
- 1/4 cup spinach, kale or basil leaves
- 2-3 tablespoons boiled peas or any other vegetables of your choice
- 1 tablespoon grated cheddar cheese
- olive oil or butter for greasing the dish
- salt to taste
This Is What You Do:
- Preheat oven to 180 degrees C. Grease a ramekin or an oven proof small dish with olive oil or butter.
- Make a bed of mushrooms, greens and vegetables at the bottom of the dish.
- Break 2 eggs over them.
- Bake until the whites are just set, for 10 minutes.
- Take out the bowls, top with grated cheese and roasted chilli flakes.
- Bake another couple of minutes or till the yolks are cooked the way you like.
- Total 12-15 minutes for runny yolks, 15-18 minutes for soft-cooked yolks, or 20 minutes for hard-cooked yolks.( For roasted flakes just heat a skillet, roast the flakes till you can smell an earthy aroma, should take a few seconds. Ground paprika tastes equally good).
