Finally I’ve found a quote that expresses my love for baking bread. These cute little buns are addictive. I can eat them with almost anything…from breakfast to dinner, with spreads, soups and gravies.
[Breadmaking is] one of those almost hypnotic businesses, like a dance from some ancient ceremony. It leaves you filled with one of the world’s sweetest smells… there is no chiropractic treatment, no Yoga exercise, no hour of
meditation in a music-throbbing chapel. that will leave you emptier of bad thoughts than this homely ceremony of making bread.”

For Sesame Cheese Buns :
2 cups all-purpose flour
1/2 teaspoon salt
2 teaspoons active dry yeast
1/4 cup warm water
1 tablespoon sugar
3/4 cup milk
1 tablespoon butter
1 egg
1/2 cup cheddar cheese, grated
1/2 cup sesame seeds or lint seeds
This Is What You Do :
Mix flour and salt in a big mixing bowl. In a small bowl mix lukewarm water, sugar and yeast, leave it to bubble up for 5 minutes. Heat milk (not boil) in a saucepan, add butter to it, let it come down to room temperature. Mix milk and yeast mixtures. Pour slowly into the flour bowl. Mix with your hands till it forms a bowl. Put the flour mix in your food processor with the kneading blade in it. Process for 4 minutes on medium speed, giving rest to your food processor every minute. Take it out, knead with your hands another 2minutes. Place it in a lightly greased bowl, cover and leave it to rise for 1+1/2 hours. Knead the dough 2-3 times and divide into 8 equal portions. Make a small balls out of portions, pierce with your thumb in the centre to make a deep hole in each. Fill 2 teaspoons of cheese into the holes. Gather the surroundings, so that the cheese hides inside the balls. Beat egg with a tablespoon of water. Brush the balls with egg mix, dip into sesame seeds. Leave to rise again another 20 minutes. Preheat oven at 220 degrees C. Bake for 8-10 minutes, reduce temperature to 165 degrees C and bake another 15-20 minutes or till golden brown. Serve warm with soups and gravies. Enjoy !
