Rice is my favourite staple food as it can be mixed with pretty much anything and tastes great. This time I decided to mix them with red beans to add a good quantity of healthy protein to the recipe. This one pot, easy to cook recipe is a complete meal with carbohydrates, vitamins, protein and fibre to energise your body and is loaded with flavour to satisfy your taste buds.
For Red Beans Fried Rice:
2 cups red beans, boiled or canned
2+1/2 cup long grained basmati rice
1 medium onion, chopped
4 tablespoons tomato purée
1 teaspoon cumin seeds
1 teaspoon paprika
1 teaspoon black pepper
2+1/2 teaspoon salt or to taste
1/4 cup vegetable oil
This Is What You Do :
Heat oil in a deep pan, fry onions till light golden. Add tomato purée, cumin seeds, paprika, black pepper and salt. Stir fry for a minute, add rice continue to stir fry another 3-4 minutes. Add 4 cups water, reduce heat to medium low, cover the pan. Let the rice cook till al dente and the water is reduced. Stir in red beans, reduce heat to low and cover the pan another 2 minutes till the water is completely dried out. Serve hot with tomato salsa.
Serves 5-6

Hey Yusra, paprika is a chilli powder milder than our red chilli powder, used in Spanish and middle eastern cuisine. It’s very easily available in all big grocery stores but if you can’t find it, you can use 1/2 teaspoon of our own red chilli powder.
