My idea of a leisurely evening is complete if I have a strong cup of coffee or black tea in my hand and with it a comforting piece of streusel Coffee Cake with crunchy, nutty topping to munch on slowly. All you need now is a good book or some soothing music to unwind.

Streusel is a crumbly topping made with a combination of butter, flour and sugar for pies, muffins, breads and cakes.Sometimes spices and nuts are added to enhance the the flavour.You can replace pistachios in the recipe with any of your favourite nuts, walnuts and almonds taste great too.

This coffee cake is not very sweet in itself ,the sweet element comes from the brown sugar and pistachio topping…with a hint of bitter from the coffee flavour which adds depth to the taste.

For Coffee Cake:

1 cup butter, softened
3/4 cup light brown sugar
1/2 cup granulated sugar
2 eggs or 2 bananas mashed
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/3 cup milk

For pistachio Streusel:

1/3 cup all-purpose flour
1/3 cup light brown sugar
1/4 cup butter, softened
1/2teaspoon ground cinnamon
1 teaspoon instant coffee
1/2 cup pistachios, crushed

This Is What You Do:

Heat oven to 165 degrees C.

Make topping by combining all the ingredients of topping in a bowl. The mixture shall look like wet sand.

Combine all the ingredients of cake in the food processor jug and process till thoroughly combined.

Butter and dust with flour a loaf pan. Spoon the batter into the pans, sprinkle the crumb topping over the batter. Make sure the topping completely covers the batter.

Bake cake for 50 minutes or until light brown. Cool and slice into 8-9 pieces.
