Good Old Egg and Butter Sandwiches :
For Egg and Butter Sandwiches :
2 hard boiled eggs
2 tablespoons butter
2 teaspoons mustard sauce
1 teaspoon black pepper
A pinch of salt
4 bread slices
This Is What You Do :
Mash eggs with a fork, add all the other ingredients and mix well. Cut the bread slices with a round cookie cutter or the rim of a glass. Spread the egg and butter mix generously. Serve at room temperature.
Makes 4 open faced sandwiches
Cucumber and Carrot Slaw Sandwiches :
For Cucumber and Carrot Slaw Sandwiches :
1 medium carrot, shredded
1 cucumber, shredded
2 tablespoons mayonnaise
2 tablespoons cream
2 tablespoons cream cheese
1 teaspoon dried parsley
1/2 teaspoon paprika
A pinch of salt
4 bread slices
This Is What You Do :
Mix shredded carrots and cucumbers in a bowl, add the rest of the ingredients and mix well. Cut rounds out of slices as mentioned above or just trim off the crusty edges. Spread the slaw generously. Serve chilled.

Eggplant and GarlicButter Sandwiches :
For Eggplant and GarlicButter Sandwiches:
1 medium egg plant
3 tablespoons butter
1 teaspoon garlic powder or 2 cloves crushed garlic
1 teaspoon black pepper
Salt to taste
4 pickled cherry peppers or 2 green chilli peppers, sliced for garnishing
2 bread slices, grilled
This Is What You Do :
Slice the eggplant into thin rounds, grill till tender. Discard the skin. Mash up the eggplant in a bowl. Add butter, garlic powder, pepper and salt and mix till all ingredients become one. Grill bread slices, cut them into half , making two triangles. Spread the eggplant mix generously, top with pickled cherry pepper slices or chopped green chilli peppers and spring onions. Serve warm.

Sole Fish and Black Olives Sandwiches :
For Sole Fish and Black Olives Sandwiches :
4 fillet sole fish
2 tablespoons lemon juice
1/2 teaspoon garlic powder
1/2 teaspoon ground cumin
1/2 teaspoon salt
1 cup cabbage, shredded
1/2 onion, chopped
2 tablespoons plain yogurt
1 teaspoon honey
1 teaspoon mustard sauce
1 teaspoon red chilli flakes
A drizzle olive oil
7-8 pickled black olives
2 slices of bread
This Is What You Do :
Marinate fish fillet in lemon juice, garlic , cumin and salt for 20 minutes. Heat a frying pan, add fish and all the marinade. Cover and let it cook in the marinade over low heat. When the fish is done, drizzle a little olive oil and break with fork into smaller chunks. In a bowl add yogurt, honey, mustard sauce, chilli flakes and salt. Stir in shredded cabbage and chopped onions, mix well. Grill bread slices, cut into triangles. First heap the cabbage and onion salad, then fish and top with olive halves. Serve at room temperature.
