I simply love all sorts of cobblers, crisps and crumbles, easy and quick to prepare and so comforting.
This particular crumble is my most favourite because I can choose fruits and mix them up according to any season but dates stay in no matter what ! They add a gooey stickiness to the rest of the sweet, sour and crumbly mix that binds everything together !
With a good dose of fresh and dried fruits, and oats this becomes a dessert that you eat for breakfast. Filling, nutritious and so yummy ! Now who doesn’t like that ?!
You reduce the amount of sugar to your liking. The quantity mentioned in the recipe would make medium sweet crumble.
For Mixed Fruit Breakfast Crumble
For Crumble :
1 cup all-purpose flour
1 cup quick cooking Barley oats
1 teaspoon baking soda
1/4 teaspoon salt
1 cup unsalted butter
2 tablespoons brown sugar
2 tablespoons caster sugar
For Mixed Fruit Filling :
3 medium peaches, peeled, destoned and sliced
2 apples, peeled, cored, sliced
12 dates, stones removed , chopped
1/2 cup raisins
1/2 cup walnuts
2 tablespoons balsamic vinegar
1/2 cup brown sugar
4 tablespoons all purpose flour
1/2 teaspoon ground cinnamon
1/4 cup butter
This Is What You Do :
Heat the oven to 175 Degrees C. Put all the ingredients of crumble in food processor and mix till the mixture resembles wet sand.
OR mix in a bowl, breaking the butter with your fingers and mixing everything thoroughly till crumbly. Refrigerate till you prepare the peach filling.
Take an oven proof pan 8×8 square and add all the ingredients of fruit filling.
Mix till fruits are coated with sugar, flour and butter. Spread the crumble mix over fruit filling evenly. Bake for around 35 minutes or till the top is golden brown. Serve hot with ice cream or with warm vanilla custard.
