I wanted to make something quick and easy for a busy day lunch but it had to be something tasty without being too heavy and acceptable to the kids
I thought I was asking too many things for a recipe to stay simple and quick. Then it struck me that I should make simple mini burgers with whatever was available in the fridge and give them an oomph with some sort of sauce or filling.
What I found in my fridge led me to make this olive filling which turned out to be so tasty that even though my elder daughter doesn’t like olives, she couldn’t resist the olive filling.
My husband has asked me to make a jar of this filling and refrigerate it so that he can use it as a spread over wheat crackers or bran slices for a low calorie snack. So, friends, hereon this olive filling is going to be a permanent fixture in our kitchen.
I served these mini burgers with baked sweet potato fries and stir fried French beans.
For Mini Burgers with Olive Filling :
6 mini burger buns
3 low fat chicken or turkey sausages, grilled and chopped
1 large tomato, sliced
1 cucumber, sliced
15-20 pickled olives, rinsed to get rid of extra salt
4 cloves garlic
2 tablespoon olive oil
2 tablespoons lemon juice
2 tablespoons parsley, chopped
1 green chilli pepper, chopped
1/4 teaspoon black pepper
This Is What You Do :
Prepare the filling by placing olives, garlic, olive oil, lemon juice, parsley, black pepper and green chilli pepper in a blender. Blend to a chunky paste, not too smooth.
Grill sausages and slice, lightly toast buns. Layer tomatoes, sausages, cucumbers inside the buns, generously top with olive filling.
Makes 6 mini burgers with this much olive filling.
