Some people have certain medical conditions ( like PCOS) that don’t allow them to use flour or flour based products to thicken their soups, some people simply don’t like the taste of flour in their soups (including my husband)….for all such friends, here are some tips to make their soups tastier and thicker.

You can add whole milk, cream or yogurt to your soups. This requires lot of care while mixing any of these into the soup, keep the heat really low and keep stirring to avoid splitting. This will give a richer texture to your soups.

Make a mixture of egg yolk and cream( 1 yolk + 1 tablespoon cream for every cup of soup). Add a little of the hot soup to the mixture before you pour it into the scalding hot soup pot, it tempers the temperature of egg and stops it from solidifying. Keep the heat at a simmer.

The best and easiest way is to remove the vegetables from the soup ( the ones you used to make the stalk; onions, garlic, carrots, tomatoes, bell peppers or any other) and purée them in a blender, then return them to the soup to thicken it. This will enhance the flavour of your soup.
