The month of pink and red decorations, hearts, chocolates and flowers is here. But if the clichéd Valentine’s day stuff is not your thing, no worries. Why not celebrate YOU, this month of love!
Embrace the holiday and celebrate your love for yourself. Do something special, like get a haircut or foot massage, watch back to back episodes of your favourite tv show or put on your favourite music and cook a lovely meal all for yourself.
Meal for one doesn’t have to mean a sloppy heap of leftovers on the plate. The goal is to prepare a warm, comforting, indulgent meal for one that looks pretty on the plate and still doesn’t take a ton of effort or break the bank – just like this Hearty Breakfast Pita Pizza.
Using a piece of store-bought pita bread in place of pizza dough makes this recipe super quick and easy to throw together in the morning. Bread, your choice of spread and cheese, assortment of vegetables, juicy salty olives and egg with runny yolk all baked together to a loaded perfection make this little pita pizza seem like an extravagant treat.
You can make your own combinations with whatever you fancy or whatever is easily available. The ingredients given are just to trigger your imagination!
Ingredients :
1 pita bread
1 egg
2 tablespoons mozzarella/feta/cheddar or cheese of your choice
1 small tomato, sliced
4-5 olives, sliced
1 green chilli peppers or 1/2 a bell pepper, sliced
A few onion rings
A few slices of zucchini
2 tablespoons pesto /tomato sauce or garlic olive oil
Salt and red chilli flakes for seasoning
Some herbs for garnishing ( I used dried oregano and thyme)
This Is What You Do :
Heat oven at mine 200 degrees C.
Place the bread on a lightly greased oven proof tray.
Spread whatever basic sauce you are using on pita bread, I used pesto.
Arrange the vegetables and olives all around, leaving the centre empty for egg.
You can use an onion or bellpepper ring or round/heart shaped cookie cutter to keep the egg in place. If using a cookie cutter, dont forget to grease the inside for easy removal. Break the egg inside the ring.
Season with salt and red chilli flakes, garnish with cheese and herbs.
Bake for 8 minutes or till the whites are set, if you don’t want the yolk runny, bake another 2 minutes.
Makes 1 pita bread breakfast pizza.
