Holiday season means baking, lots and lots of baking! Not only to load the table with yummy goodies and bake homemade gifts for friends and family but also this is the best way to keep the home warm and smelling amazing. These Ginger Cinnamon Brownies are perfect for the holiday season or baking with kids. I have taken my basic brownies recipe up a notch by adding a touch of spice and heat from cinnamon and ginger.

The recipe is very simple and foolproof that you can easily tweak to add your own favourite flavours to it, like vanilla, coffee, chillies, raisins, nuts, chocolate chips and whatever your imagination can stir up. Or you can bake them as pure chocolate indulgence. I use a big bowl to melt butter and chocolate in the microwave so that later on I can stir in the rest of the ingredients in the same bowl. It’s kind of difficult to resist devouring the warm silky chocolate and butter sauce as it comes out of the microwave. The only thing that keeps me from diving straight in is the prospect of sinking my teeth into gooey brownies a little later.

All you have to do is mix everything in one bowl to get these thick, moist, fudgy, glorious chunks of Ginger Cinnamon Brownies within 40-45 minutes which includes prep time too. That’s the quickest and easiest way to having your chocolate dreams come true! I can bet that you will never need another brownie recipe after you have tried this.

Ingredients:

1 cup chopped dark or milk chocolate
1 cup softened butter
1 cup plain flour
1 cup caster sugar
3/4 cup brown sugar
3 eggs
1 teaspoon grated ginger
1 teaspoon ground cinnamon

Ingredients:

Preheat the oven to 170 C and grease and flour a 8×8 inch square pan.

Melt the chocolate and butter in a bowl in the microwave at 15 seconds intervals till it’s silky chocolate sauce or over a double boiler until smooth.

Add in both the sugars and mix.

Add the flour and stir until well incorporated.

Whisk in the eggs, ginger and cinnamon until the batter is thick and smooth.

Pour the mixture in the prepared baking tray and bake for about 30 – 35 minutes.

Let the brownies cool before cutting into squares.

Serves 9
