For weekend dinners, the whole family is going to eat together and they are expecting something special, sumptuous, and comforting….something that can be eaten sitting on the lounge couch while watching a movie.
A long list of glamorous dishes comes to your mind like Chilli Chicken Dry Recipe and, Chicken Ginger Masala BUT the problem is you are dead tired after a whole week of waking up early, finishing chores, running after kids, and going to bed late….you don’t want to stand in front of the stove for hours.
You have two choices…. order a pizza (which is so mundane plus you are watching your weight) or get your hands on a recipe that fulfills all your family’s requirements without killing you.
So here is one such recipe to spice up your weekend; I made this ginger chilli chicken last night when I was dog tired after doing groceries and running after my younger daughter for two hours in the play place.
This recipe for ginger chilli chicken is spicy, if you are not into spicy food, spice it down to your level of tolerance. Have a happy weekend! : )
For Ginger Chilli Chicken:
- 6 chicken breast fillets, cut into bite-size pieces
- 2 tablespoon vinegar
- 1 teaspoon cayenne pepper
- 3 tablespoons ginger-garlic paste
- 2 tablespoons soy sauce
- 1/4 cup all-purpose flour
- 2 tablespoons corn flour
- Vegetable oil for shallow frying
For The Sauce:
- 1 teaspoon red chilli flakes
- 1/4 cup vegetable oil
- 1/2 cup chopped onions
- 3 green chili peppers
- 3 tablespoons ginger finely julienned
- 2 stalks green onions, cut on the diagonal
- 3 tablespoons tomato ketchup
- 2 teaspoons hot sauce
- 1 tablespoon oyster sauce
- 1 tablespoon soy sauce
- Salt to taste
- 2 tablespoons cornstarch
This Is What You Need To Do:
- Cut bite-size cubes out of chicken fillets.
- In a bowl mix chicken pieces, vinegar, ginger garlic paste, chili powder, soy sauce, and salt.
- Go really easy on salt because we are using soy sauce and there is salt in the hot sauce as well. Add the flour and corn flour….mix well till the marinade looks like a paste and coat the chicken pieces completely.
- Heat oil in a wok; cook chicken pieces on medium heat till they are crisp and golden.
- In a medium sauce pan add oil, chili flakes, onion and chopped ginger, heat them for two minutes on low heat, add ketchup,oyster sauce, hot sauce and soy sauce.
- Add corn starch till the sauce thickens. Heat the frying pan on medium-high heat, and add chicken, sauce, green chilies, and spring onions…fry for a minute and your ginger, chili chicken is ready!
- you can serve this as an appetizer or with steamed rice as a meal.
- Though I had some leftover steamed rice in the fridge the dish was eaten as soon as it was done without rice….my husband even licked the serving spoon clean!
