Do you need a special occasion to enjoy the dark, deep indulgence of Brownies? Never, right! That’s the best thing about brownies. They are amazing, off-the-cuff, everyday treats. Easy to make finger food for any day, any time!
But with Valentine’s Day right around the corner we all start looking for chocolate recipes with a special twist – recipes that would convey your feelings to your loved ones in the warmest possible way. This super simple recipe for Fudge Molten Lava Brownies makes this favourite family indulgence into something totally decadent and extravagant with very little effort.
I do enjoy them when they go cold and chewy but, believe me, there is no comparison to the ecstatic experience when you dig into the warm brownies and glistening chocolate lava oozes out with the mere touch of the fork!
And have you seen the ingredients list? It’s so ordinary and simple. No special chocolate required. Any left over, lying in the freezer chocolate bars would do.
I use organic brown sugar for most of my desserts but you can use any variety you have or prefer.
For a pure vegetarian version, simply substitute eggs with bananas.

Ingredients:
- 1 cup plain flour
- 2 cups brown sugar
- 1/2 cup cocoa powder
- 1 cup unsalted butter
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 4 large or 5 small eggs (Or bananas)
- 1 teaspoon vanilla essence
- 1+1/2 cup roughly chopped Milk or dark chocolate
This Is What You Do:
- Preheat oven to 175/180 degrees C.
- Lightly grease a square 8×8 inch pan or better line with foil sheet for easy removal.
- In a saucepan, melt butter on low heat.
- Add sugar and stir for a few minutes till the sugar blends. Take off heat.
- Mix flour, soda, salt and cocoa in a bowl. Add to the melted butter and sugar.
- Mix with a spatula. The mixture shall be quite dry at this stage.
- Best eggs and vanilla together. Add to the brownies batter. Don’t over mix.
- Chop chocolate into rough chunks. Stir the chunks into the batter.
- Immediately pour into the prepared pan and bake for 25 minutes for very molten inside or 30 minutes for a fudgy texture. Or till the top is set and dry but underneath still feels very soft and the skewer inserted comes out coated in gooey chocolate.
- If you want to serve with lava oozing out, serve warm. If you prefer a more brownie like texture – chewy on top and edges and gooey inside then serve cold.
