There is an endless variety of poultry recipes in Asian cuisine and with a subtle change in ingredients the tastes and textures change amazingly to something totally different.
This Easy Chinese Lemon Chicken Recipe has crispy fried chicken coated with sweet and sour lemon sauce. Not only it gets done in a jiffy but with just a hint of ginger in the background and oodles of fresh flavours, it is just the thing for summer.

Light, refreshing and not spicy at all, perfect for the whole family and kids’ parties. If you want to make it spicy, serve chopped green chillies in vinegar or hot sauce on the side.
Serve with vegetable fried rice or egg noodles.

Ingredients:

For Crispy Fried Chicken:

1/2 kg skinless, boneless chicken
3 tablespoons water
4 egg yolks
1/2 cup corn flour
1/2 teaspoon salt
1 teaspoon black pepper
Sunflower Oil for shallow frying

For Lemon Sauce:

1/3 cup lemon juice
4 tablespoon brown sugar
2 tablespoons soya sauce
1 tablespoon ginger, finely chopped
2 cups chicken stock
3 tablespoons corn flour
Spring onions for garnishing

This Is What You Do:

Cut chicken into bite size pieces.
Mix corn flour, salt, pepper, egg yolks and water in a big bowl to make a batter.Add chicken pieces, mix to coat them completely with batter.
Set aside for 10 minutes.

Heat oil in a frying pan, almost an inch deep. Remove chicken from batter, fry in batches till crisp and golden. Drain oil, keep covered and warm till you make the sauce.

For lemon sauce mix all the sauce ingredients in a medium saucepan. Cook over medium low heat, keep stirring till the sauce boils and thickens.

Arrange the chicken pieces in a serving bowl, pour the sauce over them and garnish with spring onions and lemon slices.

Serve hot with steamed rice or noodles.
