“Friends are like cup cakes in my pantry of memories”.
This super fun and easy cup cake recipe is something you can cook even with kids or as your first baking adventure. The chocolate cupcake itself is light and fluffy, you can use any favourite frostings and sauces to top it…I have given recipes for two of my favourite frostings.
For the Chocolate Cupcakes :
2+1/4 cups all-purpose flour
1+2/3 cups sugar
2/3 cup cocoa
3/4 cup butter
1+ 1/4 cups water
1+1/4 teaspoon baking soda
1teaspoon salt
1/4teaspoon baking powder
1 teaspoon vanilla
2 eggs
This Is What You Do :
Heat oven to 175 degrees C. Beat all the ingredients 30 seconds on low speed and 3 minutes on high speed. Fill paper cups 2/3 with batter. Bake in batches of 12 for 18- 20 minutes. Cool completely before frosting.
For Creamy Vanilla Frosting :
3 cups powdered sugar, sifted
1/3 cup butter, softened
1 teaspoon vanilla essence
2 table spoons milk
This Is What You Do :
Mix powdered sugar and butter. Stir in vanilla and milk. Beat with an electric mixer till smooth and of spreading consistency. If you want to make frosting colourful, divide into different bowls for different colours, add 1/4 teaspoon of desired colour and mix thoroughly.
For Peanut Butter Frosting :
Substitute peanut butter for the butter. Increase milk to 1/4 to 1/3 cup.
Spread on the cup cakes and sprinkle with desired sprinklers or chocolate chips OR fill the frosting into the decorating nozzle and have fun making different designs. Enjoy !
Tip: creamy frosting if too thick can pull and tear the surface of cake or cup cakes or get stuck in the decorating nozzle. Thin frosting with a few drops of water or milk.
