These chocolate banana eggless pancakes do not require any eggs, but are still very soft, spongy and fluffy. And no, I’m not a vegetarian. Besides, I love eggs. But I have many friends who are vegetarians or with egg allergies so I keep trying to create yummy recipes for them along side my non-vegetarian family and friends. I believe my blog is just like my home and I want all my guests to feel welcome here, with something yummy to enjoy for everyone.

It takes minutes to add everything in the blender and make a smooth batter, loaded with the goodness of bananas, mildly sweet with brown sugar and oozing with chocolate flavour.

Make someone you love very happy with this delicious and healthy breakfast in bed served with their favourite toppings, like Greek yogurt, ice cream, fresh fruits, honey, maple syrup and golden syrup.

Mash bananas and add to the batter. Mix to make smooth paste. Or add all the ingredients, except oil, to a blender jug and whiz to a smooth batter.

Lightly grease a heavy bottomed or nonstick, frying pan. Place on medium heat. Add 1/2 cup batter to the pan, swirl the pan to spread it in a round.

As soon as bubbles appear on the surface, pancake is ready to flip. Sprinkle a few chocolate chips or shredded chocolate on the wet side and flip.

Cook another minute and place on the serving plate. Repeat with all the batter.
