But if you live some place where you can’t find chipotle chillies then you can experiment a little bit to create a mix of spicy and smoky. I have sometimes puréed jalapeños with some BBQ sauce to create the effect successfully as chipotle are dried and smoked jalapeños after all!
You can also use Tabasco sauce in this Chipotle Chicken Casserole recipe instead for heat but then you’ll miss the smokiness.
Tip: remove the seeds from chillies before you purée them for less hot casserole.
Ingredients:
3 large onions
a small head broccoli
2 large potatoes cut into wedges
2 cloves garlic
3 chipotle chillies
1 cup hot water
2 tablespoons olive oil
Salt and black pepper to taste
Fresh or dried oregano
This Is What You Do:
Preheat the oven to 180 degrees C.
Peel the onions and cut them into thin, round slices.
Heat 1 tablespoons oil in a frying pan. Cook the onions till tender but not golden. Remove from heat.
Brush a casserole dish, big enough to hold six chicken breasts, with the remaining oil.
Spread the onions evenly in the pan, spread broccoli florets and potato wedges over onions, sprinkle a little salt and pepper over them.
Layer the chicken breasts on top of the onion slices. Sprinkle a little salt and pepper over them.
Add the softened chillies, soaking water and garlic to a blender and whiz to make a sauce.
Pour the sauce over the chicken, make sure all of it is evenly coated.
Place the casserole in the oven, bake for 30 to 45 minutes, depending on the thickness of chicken breasts.
Serve hot with plain white rice or Mexican fried rice or simply with fresh salad for a low fat,low carb, healthy meal.

Dear Homaira, a friend sent me some from England but when they were finished, I started making my own version at home. Basically they are dried red chillies with smoky flavour. You can lightly grease a tawa or pan and toast some chillies for easy and economical solution 🙂 Hope this will help.
