Chicken Rolls with spinach stuffing is a quick and easy recipe for a healthy and delicious meal. The chicken stays wonderfully moist and spinach and cottage cheese enrich the flavour and add creaminess to every mouthful.

This is one of those recipes that produce impressive results with minimum time and effort in the kitchen. You can be creative with stuffing ideas, mashed potatoes, mixed vegetables, spicy cabbage are a few of my favourites for Chicken Rolls stuffing.

Ingredients:

4 chicken breast fillet
1 teaspoon salt
1/2 teaspoon red chilli powder
1 teaspoon ground cumin
1/2 teaspoon garlic powder
4 tablespoons lemon juice
1 kg spinach
3 tablespoons cottage cheese
Salt and pepper to taste
3 tablespoons olive oil

This Is What You Do:

Place chicken fillet over a chopping board and hammer them till evenly thin. Sprinkle salt, red chilli powder, ground cumin, garlic over both sides. Pour lemon juice and refrigerate till you prepare spinach stuffing.

Thoroughly wash spinach and chop roughly. In a microwaveable bowl add spinach and a little water( 2 tablespoons). Cover and microwave for 4 minutes. When it’s cool enough to handle, squeeze all the water out of it. You shall have about 1 cup of spinach now. Add cheese, salt and pepper and mix till everything is blended.

Divide the spinach mixture into 4 parts . Place spinach in the middle of a fillet, roll as tightly as you can. Repeat with the remaining fillets.

Heat oil on medium heat in a non stick frying pan. Place the chicken rolls in the pan, folded side down and seal them for 2-3 minutes. Reduce heat to low, cover the pan and cook for another 8-10 minutes, turning once or twice till golden brown on all sides.

Serve hot with your favourite salad. I served them with spicy corn salsa.
