This quick and easy recipe for baked mini donuts is a tried and tested hit at children’s birthday parties, pool parties and sleep overs. The best thing is these are neither too sweet, nor deep fried. No matter how many batches I bake of these light and fluffy treats for my daughters and their friends, the donuts seem to disappear in thin air.

For Mini Baked Donuts :
3 tablespoons butter
1 cup milk
3 tablespoons caster sugar
1 sachet dried yeast
2 eggs
2 cups plain flour
Pinch salt
1 cup dark chocolate
1 tablespoon olive oil
1/4 cup sprinkles

Makes 14 mini donuts

This Is What You Do :

Warm milk and butter in a pan till the butter is melted. Take off heat and add caster sugar, yeast and eggs. Mix the batter thoroughly. In a big bowl add flour, stir in salt. Make a hole in the middle of flour, pour the egg mix in the hole slowly and stir till dough is smooth and silky.
Cover the dough and leave to rise for at least 45 minutes. Preheat oven at 175 degrees C. Prepare a mini bundt cake tray. Lightly grease the tray and sprinkle with flour. Dust off excess flour.
Pour almost 1 tablespoonful of batter in each mini bundt cake cup. Bake for 18-20 minutes or till the tops are golden and firm to touch.
While the donuts are baking lets make chocolate glaze. Microwave dark chocolate and olive oil on medium, stirring every 15 seconds, till the chocolate melts and blends with oil. Don’t let the Chocolate burn.
Let the donuts cool, loosen the edges with a teaspoon and carefully scoop them out. Hold them upside down and dip halfway into the chocolate glaze, decorate with sprinkles. Refrigerate for a while, till the chocolate glaze sets.
