Aloo bukhara or Spiced Plum Chutney is an essential condiment to go with all festive food, be it a wedding banquet or Eid celebrations. The sweet and sour chutney resembles fruit jam in consistency and adds an instant kick to foods like Pulao , biryani and roasted meats.
I first fell in love with it as a child at some wedding feast, ever since I believe that this chutney completes the overall experience of traditional Pakistani food.
It’s made with dried plums because they have a very strong concentrated sweet and sour flavour. Sesame or melon seeds and almonds add an interesting and rich texture dimension to it.
The health benefits of this potassium and fibre rich fruit are numerous; it’s heart friendly, a wonderful digestive aid and great antioxidant.
Ingredients:
1/2 kg dried plums
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon ground cumin
1/2 teaspoon nigella seeds (kalonji)
1 teaspoon black pepper
1 teaspoon red chilli flakes
2 teaspoons salt or to taste
1/2 cup brown sugar
2 tablespoons white vinegar
1/4 cup sesame or melon seeds
1/2 cup almonds
5 cups water
This Is What You Do :
Add 5 cups of water in a saucepan, stir in the dried plums, salt, black pepper, ground cumin, nigella seeds, onion and garlic powder.
Cook them over low heat till the plums are soft and water reduced to half.
Add brown sugar, vinegar and chilli flakes, cook till the chutney thickens.
When it cools stir in sesame or melon seeds and almonds.
Store in a clean, sterilized,airtight jar in the refrigerator. It will last for weeks.
