So strawberries and cherries leave my city, Lahore, around midsummer…and then arrive grapes that stay till mid autumn. Not only they are one of the most delicately delicious fruit on this earth but make up very well for the loss of berries in desserts.
This quick and easy to bake cake is very light in texture and tastes delicious as with every bite grapes burst with juice . If you don’t like to bake with olive oil, you can replace it with vegetable oil.
If you are in a mood for a mildly sweet, lightly fragrant dessert, this red grapes and olive oil cake is just the thing for you !

For Red Grapes Olive Oil Cake, Eggless :

1+1/2 cup all purpose flour
1+1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup caster sugar
1/2 cup milk
1/2 cup extra virgin olive oil
2 tablespoons lemon juice
1/4 cup maple syrup
1/2 teaspoon vanilla essence
2 cups red grapes, seedless
A little icing sugar and ground cinnamon to sprinkle over

This Is What You Do :

Mix flour, baking soda, salt and sugar in a big mixing bowl. Add milk, olive oil, lemon juice and maple syrup. Mix till the batter resembles a smooth paste. Stir in 1 cup grapes and softly mix with a spatula.
Preheat oven to 175 degrees C, grease and flour an 8 inch round pan. Pour the cake batter in the prepared pan, bake for 12 minutes, take the cake out of oven, put the remaining 1 cup of grapes on top, slightly press them into the cake with your finger. Bake another 25-28 minutes or till a wooden skewer inserted in the centre comes out clean and the top turns golden brown.
