There has been quite some time I haven’t updated the Cooking with Kids category on the blog.
Winter Holidays have started with my kids baking these yummy double chocolate eggless cookies. Initially they were baking these for Santa but more than half they have consumed all by themselves…who can resist Double Chocolate Cookies after all !
Now they will bake a whole new batch for Santa as these are super quick and easy to make. Also these are appropriate treat for people who are allergic to or don’t eat eggs. Happy baking.

For Double Chocolate Eggless Cookies :

1 cup all purpose flour
4 tablespoon butter
1/2 cup unsweetened cocoa
2/3 cup sugar
1/3 cup brown sugar
1/3 cup plain yogurt
1/2 teaspoon vanilla essence
1-2 cup chocolate chips
1/2 teaspoon baking soda
a pinch salt

This Is What You Do :

Heat oven at 175 degrees C.
Mix flour, cocoa, baking soda and salt in a bowl. Melt butter in a microwave safe bowl, add both the sugars and mix, add yogurt and vanilla, stir to combine.
Add the flour mix, gradually to butter and keep stirring. Add chocolate chips, mix. Dough shall be stiff to mix and lumpy…no worries !
Take a heaped tablespoon of dough, make a little ball, press slightly to make a cookie. Place on a greased baking tray. Repeat with the rest of the dough, place cookies at 1/2 inch distance from each other as they expand while getting baked.
Bake for 10-12 minutes. Cookies will be still soft to touch as they come out of the oven. They get firm as they cool down.

Makes 12 cookies
